It’s no secret for me that blogging has become a scarcity in my life. You know, life happens sometimes and you get really busy drinking beer, petting puppies, and occasionally going to a specific location where collaborative fitness happens. Ya know? But, I don’t have to tell you that because YOU have a V (how kids are saying “very” these days; saves TONS of time) busy life too!  Thanks for understanding, girl!

This has become one of my favorite soups for the winter months. I’ve always loved it but decided to put my own spin on it. Plus, this easy, minimal-effort method leaves plenty of time for Netflixing in pajamas or whatever weird stuff you do in the winter months.

Life is really hard when you’re stupid. Take it from me. It’s a challenge. But luckily, I’m pretty. My mom said that makes it better. 


Anyway, I’ve been experimenting with this recipe for a long time. And I was so proud because I’d found a new “paleo” formula to add to my carousel of recipes! Until I told my sister about it and she ruined my Soy Sauce dreams. Because apparently Soy Sauce is super NOT paleo. I mean, I knew it wasn’t the healthiest of things but, I just kept thinking about how it was only a smidge and I like it. 
Anyway, I found an alternative and this is great and you’re welcome and please do this and love it and tell all your friends. Even if you’re not Paleo or even know who Paleo is. 


Also, Paleo is not a person. Who’s stupid now, Carol?!

So, a while back, I found a recipe for a chickpea tagine that I tried and found to be delicious. It was so easy, quick and consisted of items I already had in my pantry.

HOW MUCH DO WE LOVE THAT?

A whole much. That’s how much.

Well, since then I’ve made it quite a few times and really (I would like to say) perfected the CRAP out of this recipe. So much so, last time I made this I specifically texted my BFF, “I officially make a BOMB A$$ tagine.” I’ve got the screenshots to prove it.

Not that a screenshot would prove very much. I mean, you can’t necessarily know how “bomb a$$” my cooking is by a picture.

And thus, everything my food blog is based upon comes crumbling down completely.

Anyway, this is SUPER delicious and will offer you a really refreshing break from your normal culinary routine. Try it and let me know how it goes in the comments!

Can we all agree that Diners Drive-Ins & Dives is a great show minus the obnoxious bleach blond starfish of a host? I super love that show. Because, I seriously love going to a local “nothing” restaurant that no one has heard of to have their famous “dish.” It’s something that feeds my soul.

Any waze, last fall my friends and I made the grandiose journey to Arlington, TX to see Coldplay in concert. That is a really inconsequential point however, I just wanted you to be aware I saw Coldplay in concert.

There’s a specific restaurant in Arlington that was featured on “DDD” (as the kids call it) and we decided it try it. It is an Eastern European restaurant called Taste of Europe and let me tell you something little girl, It. Was. Delicious. If you find yourself thinking, “Eastern European food sounds delicious and you’re wrong.” Well, you’re wrong for thinking that and everyone in your life probably thinks you’re wrong all the time now. Your whole integrity has now been sacrificed by your fallacies.

Any waze, I had cabbage rolls there for the first time and they probably changed my life. Since then, I’ve spent several attempts at perfecting this recipe and buh-blam. I did it. So, you’re welcome!

You know how sometimes you want to eat healthy and an idea strikes and you decide to go for it but you have like 7 out of 10 ingredients needed but you’re already in your sweats and you’re "tits-deep" in snacks & Netflix?

Well, that’s EXACTLY how this recipe came to fruition. It was dangerously close to just being labeled “half-way successful accident,” but after eating several helpings and packing it for 3 days of lunches, I definitely re-labeled this recipe a resounding success.

It is about 99.9% Paleo and definitely Whole30 approved (if you’re into either of those mildly obnoxious lifestyle choices). But more importantly, it’s Remington’s Belly Approved. And that’s an approval that’s recognized by the Geneva Convention.

Actually, that’s a lie. I can’t lie to you. I love you too much to lie to you.

So, while it does benefit from a little forethought/planning, this recipe is TOTALLY worth your time. Enjoy!
