Chipotle Hummus

I love hummus. I do not love paying an arm and a leg for it. Especially when it is mediocre-tasting hummus. Which, rarely happens for me because I’m such a glutton and love eating so much that I’ll literally eat anything. They don’t call me Billy Goat for nothing! …..They don’t call me Billy Goat.

Hummus is a great snack that is high in healthy fats and just plain delicious. Pair it with a little chipotle flavor and it is going to rock your socks off. Be careful when that happens though, people usually don’t like flying socks hitting them in the face.

Chipotle Hummus

Chipotle Hummus

1 Can Chickpeas, drained and rinsed

1 Lemon, juiced

1 Large Spoonful Tahini

2-3 Garlic Cloves, roasted or steamed until tender

Chipotle Peppers in Adobo Sauce

¼ Cup Extra Virgin Olive Oil, approximately

Salt & Pepper, to taste

Depending on how much spice you like in your life, add 2 or 3 of the peppers with a spoonful of the adobo sauce (See Picture to Left). More if you live life on the wild side. Pulse once more.

The hummus should look a little less like hummus at this point. Why? Because you haven’t added EVOO yet. Don’t be foolish.

As the food processor is running, slowly pour in the olive oil. Usually it takes about ¼ cup but, continue adding until you achieve the consistency that makes you feel like Peter Pan in super-tight dancing tights. Cause who wouldn’t love that?

Serve with a little extra EVOO drizzled on top. This is so delicious with veggies, pita chips, or on sandwiches!
