BBQ Chicken Pizza with Caramelized Onions

Every once in a while I get a wild hair. And sometimes that wild hair leads to something delicious. Sometimes that wild hair leads to wine. Which is also delicious, but 9 times out of 10 it’s one of the two. I can’t lie and honestly, I don’t really care enough to lie. I love wine. It is who I am. Love me for me, people of the world.

I was not always a fan of chicken on pizza. And I have met many a folk who would agree with non-fanliness. But then, I turned to the light. And it shown upon me in glory and grace. And it was, indeed, good.

This pizza was truly an experiment but it turned out AWESOME. I almost ate my whole pizza and I definitely finished the leftovers the next day.

Kindly direct your judgment to all the other haters that I don’t care about.

I love this recipe because it is so fast, easy and it calls for only a few ingredients. Most of which, you probably already have! Personally, I think it is also pretty kid-friendly, for all you “child hosts” out there.

BBQ Chicken Pizza with Caramelized Onions

1 lb. Chicken, approximately (Breast or Tenderloin)

BBQ Sauce

1 Large White Onion

½ Tablespoon Thyme

½ Tablespoon Parsley

1 Tablespoon Coconut Oil

Shredded Mozzarella

Grilled Flatbreads

Marinate your chosen chicken versions in BBQ sauce for at least an hour. I personally like Sweet Baby Ray’s but I don’t know your life and I’m not gonna tell you what to do. You’re an independent woman/man/both.

If you are delightfully lazy and bought a pre-made crust, good for you. If you want to stretch your culinary muscles, make my flatbread recipe. It is so good.

Cut your onion in half, from top to bottom. Then, slice. In a skillet, warm the coconut oil over medium heat and add the onion and seasonings. Stir them often and let them cook until they…what? They caramelize! See? You’re not dumb. You guessed that all on your own.

For this recipe, I grilled the chicken since the grill was already warmed and ready. Once it is fully cooked, let it rest a minute and then slice it up into bite size strips/pieces.

Using a little more BBQ sauce as the “marinara,” spread it all over your flatbread. Even the outer crust. When you bake it, it becomes a glorious, sticky mess. It’s awfully amazing. If you like a little spice, sprinkle some red pepper flakes now. I am perfect and right all the time so, I did this and was grateful.

Spread your chicken, caramelized onions and top with mozzarella cheese. I actually love blue cheese as well and it was delightful on this pizza. However, I understand that not everyone in the world is good enough to like blue cheese, though.

Bake at 450 for about 8 minutes.

Remove from the oven and wash your hands before you eat. You’re about to lick them like there’s no tomorrow.
