Grilled Asparagus Salad

If you can’t tell already, I’m really looking for ways to use my grill this summer. I sit inside a cold building all day in business professional attire and grilling makes me feel like a normal human being again. If you think that’s weird, you’re a communist probably. I got this idea from a “salad list” or something a friend showed me and just kind of did it. I love asparagus but this was a true to heart experiment. I didn’t know that it would turn out well but let me tell you, it’s my new favorite thing.

So easy. So fresh. The resulting really strong pee smell will be totally worth it.

2 Bundles Fresh Asparagus

½ Cup Crumbled Feta Cheese

Balsamic Vinaigrette (recipe here)

Olive Oil

Start by snapping all the ends off the asparagus stalks. Doing this instead of chopping them off ensures that the asparagus will break off naturally where the yucky part ends and the delicious part begins. If you’ve ever eaten the yucky bottom part of the stalk, you know what I’m saying.

After you rinse them thoroughly, coat them in just a little bit of olive oil so they won't stick. Warm up your grill to about medium and spread the asparagus in a single layer on your grill. Don’t let it get too hot or the asparagus will char before it is finished cooking!

Turn the asparagus every few minutes and after about 3 minutes on each side, it should be done. Take them off the grill and go over your stalks with a good rough chop to get them into about ½-1 inch pieces.

Toss all the pieces with the Balsamic Vinaigrette and sprinkle some cheese on top and bam! You’ve got yourself a 5-Star Treat.
