From the beginning of my time on this earth, breakfast has literally been my favorite meal. I love it. I love bacon. I love sausage. Eggs? Cheese of all kinds? You’ve got one sexual meal.
That’s probably why any mention “brunch” will make me giddy and almost pee my pants.
This recipe is so easy and healthy. Especially if you MAYBE had a little too much of the devil’s drink the night before. Make this slightly white trash version of a quiche and you won’t feel like you’re over-indulging! :)
Turkey Bacon Breakfast Casserole
1 Package Turkey Bacon
6-8 Large Eggs
¼ Cup Milk or Water
3 Tablespoons Pancake Mix
Salt/Pepper, to taste
Salsa, to taste
Without slicing your strips of bacon, cook them over medium heat until they have reached a level of crispiness that makes you feel like a kid again.
Drain any leftover fat and spread the bacon over a pre-greased 9x9 casserole dish.
Combine your eggs, water/milk, pancake mix, salsa and salt and pepper and whisk the crap out of it until all the yolks are broken apart.
If you feel like flying, I added a little rubbed sage, cracked red pepper and cayenne and it was sooooo good.
Pour over the bacon, making sure to cover all the strips evenly in the dish.
Bake at 375 for about 25 minutes.
If your friend who failed at getting turkey bacon is lactose intolerant, skip this next step to show how nice you are. If he isn’t or you don’t care if he is, cover your casserole with a really healthy dose of cheddar or mozzarella cheese and bake for another 5 minutes to let it melt all over the top.
Formally withdraw your casserole from your oven of magic and let it rest for about 5 minutes before you slice into it.
