Cucumber Salad

It’s officially June. Let’s take a second for that to sink it. Crazy that the year is going by so fast but let’s face this together. Plus side, it is pool/lake season.

Downside, it is swimsuit season.

We can sigh collectively about that later. Right now, let’s focus on snacks.

This Cucumber Salad is basically perfect for sitting by the pool (done it) or serving at a baby shower (done it). Or sitting on your couch watching Amy Schumer make racist jokes. It’s one of my favorite go-to, fresh summer snacks!

Cucumber Salad

2 8oz. packages Neufchatel Cream Cheese, softened

1 Medium White Onion, diced

1 Large Cucumber, diced

Healthy Dollop of Mayonnaise

Cayenne Pepper

Garlic Powder

Dried Parsley

To make it a little bit easier to mix it, combine your cream cheese and mayo until it is creamy enough to spread. I personally have very little love for mayonnaise in my heart so I use the bare minimum. I also use the Neufchatel cream cheese because it’s lower fat and that makes me feel just a little sexier as I’m slathering it on my face like a beached whale.

Then mix in your cucumber, onion and spices. I love the Cayenne in this recipe because it gives it just a little bit of a kick. So, if you like that, kick it up! If not, tone it down just a little. ;)

I really don’t measure things a lot. I just lick my spoon a lot. If you’re Type A, this may piss you off. For that, I formally apologize. Also, that apology is 100% invalid and fabricated from a very shallow place within myself.

This is so good though. Mix it, let it sit in the fridge for about an hour ahead of time and then spread it on a cracker, chip or sandwich. Whatever tickles your fancy, really!
