Black Bean and Corn Pico de Delicious

Every once in a while, I feel like a lump of lard. Probably a really attractive lump of lard but, nonetheless, a lump of lard. I can probably attribute this feeling to my strong affinity to cream cheese and everything delicious and unhealthy but again, that’s neither here nor there. Or something like that.A couple years ago, a friend brought this concoction to my house and I almost immediately blacked out. When I came back to consciousness, I had it all over my face, fingers, and forehead. That’s how delicious it is. And healthy. You’ll want to do the same but make sure people aren’t around or they will judge you.Black Bean and Corn Pico

Black Bean and Corn Pico de Delicious

1 Can of Black Beans 1-2 Cups of Frozen Corn Kernels 2-3 Roma Tomatoes, diced 1 Large White or Red Onion, diced 1 Jalapeño, diced and seeded 1 Red Bell Pepper, diced Cilantro, roughly chopped Freshly Squeezed Lime Juice Large Haas Avocado, roughly diced (optional)

So, to start out, pour your can of beans into a colander and give them a really good rinse. Canned vegetables always have a ton of sodium and sometimes have flavoring and seasonings that you may not necessarily want to use. Also, if you don’t do this, the sediments from your black beans will kind of make your Pico look really a lot less than sexual. So, rinse them until the water runs clear and set them to the side to dry a bit.

In a large bowl, combine all your freshly chopped beautiful ingredients. If you like a little heat (like I do), you can leave the seeds in the jalapeño. If not, or if you’re having sensitive guests, you can reluctantly remove the seeds while pouting just a little bit.

Toss all of your veggies to get them good and mingled and add your delicious black beans. Add as much chopped cilantro as you like and I squeeze at least one lime into the mix. The citrus juice will work so hard to keep your Pico tasting and looking fresh and also ensure that all the veggies become best of friends.

Next, stir in your corn. It’s okay that it’s frozen because the next step is to let the Pico start it’s magical dating journey in the fridge for at least a half hour (that’s when the flavors mesh and get all romantical).Buffalo Springs Lake

Whenever you are ready to serve your Pico de Delicious, toss in a little avocado, if you so desire, and place it in an ultra-cute serving dish with your favorite chips and BAM! Your guests slash yourself will love you so hard.

**One trick I always do is rolling the lime on your kitchen counter with your palm. This will burst a lot of the pulp and help the lime to be extra juicy.

**If you plan on having some leftovers or not eating the Pico with avocado right away, toss in the avocado seed as well. For some cosmic reason, this will keep the avocado from turning brown and yucky looking really quickly.
